Cream Cheese Frosting (Vegan)
This one whips fluffy and thick. Although you could pipe it, I prefer to spread it using an offset spatula and to stick to single layer cakes, particularly if you won’t be able to leave your finished bakes in the fridge (it will soften quite a bit if left at room temp for a few hours).
110g Trex (see note)
225g Vegan cream cheese
400g Icing Sugar (sifted)
2 Tbsp Arrowroot powder
1 tsp Vanilla extract
Get to work
Using the paddle attachment of a standing mixer or a hand mixer, mix the vegetable shortening and cream cheese until well combined. Don’t overmix or it will get runny
Add in the sifted icing sugar and the arrowroot powder in 3 increments, beating well in between until thick and fluffy
Add vanilla extract or other flavouring to taste
Note:
Any vegetable shortening will work in this recipe. Just keep in mind that the colour of your base will affect the colour of the icing which is why i like Trex which is pure white.
